If you have pre-cooked onions and peppers this dish is made in just a couple of minutes. If not read on and we will instruct you on how to cook the vegetables for your omelet first.
1 Small Onion, 1 Green Bell Pepper, 1 Tbsp Olive Oil
Skin and finely chop 1 small onion into bits

Wash 1 green bell pepper
1 Green Bell Pepper
Remove stem and seeds
1 Green Bell Pepper
Chop the pepper into small bits
1 Green Bell Pepper
Pour 1 tablespoon of olive oil into a heated frying pan over medium low heat
1 Tbsp Olive Oil
Stir the onion and pepper into the pan

Add the spinach leaves into the frying pan and stir
1 Cup Spinach Leaves
Remove once the vegetables are glistening and soft to touch

Crack the eggs one at a time into an individual ramekin

Add each egg to a large mixing bowl and repeat for the entire dozen. Adding only 1 egg at a time, whisking them all together only after all the eggs have been added to the bowl. (You never want to crack an egg directly to the same bowl as the others just in case you get a bad egg, this way you will not contaminate the others and have to discard the entire bowl)

Using clean and dry mason jars, spoon a bit of the cooked vegetable mixture in the bottom of the jar.

Pour a bit of the egg mixture over the vegetables filling the jar approximately 1/3 of the way. Do not over fill as the egg expands as it it cooking

You may store the uncooked egg mixture in the refrigerator for up to 2 days. It must be cooked within the 48 hours.

To cook the Mason Jar Omelet remove from the refrigerator and place in the microwave for 30 seconds, stir, and place back in the microwave for 30 more seconds. If you think it needs more time stir and place back in for 20 seconds, However remember the egg will continue to cook in the hot jar once removed

Let the mixture sit for 1- 2 minutes and eat right from the jar or use a knife to loosen the omelet from the side of the jar and pour out onto a plate
